Sweet Potato, Kale, and Black Bean Tortilla Bake
This tortilla bake is full of excellent textures and flavors... from the sweet softness of the potatoes to the chewier, earthy flavor of the kale. The onions kick the flavor up a notch....>>> Show all

Claire, do you want the edge of the plate on the top-side of the picture? I can flip it if you'd like, just let me know which side is up.

This is one crazy delicious way to use your spinach!
Saute one whole chopped onion in some olive oil. When the onions are starting to get cooked (about halfway done), season with salt and pepper, then add some sliced mushrooms.

Additional info from recipe writer as to suggested amount of smoked salmon and spinach?
Katherine M. (Dec 20, 2012 at 12:37 pm)
I used one packet of smoked salmon. I'm sorry I don't remember the exact amount, but it was probably 4 or 6 oz. For the spinach, I used a a lot-- one big bag full (again, sorry, I don't know the exact amount.) But it was a big, hefty bag of spinach. The spinach cooked down in size a lot.

For Paleo diets, you could substitute bacon or even a T or so of browned ground beef in lieu of the feta if doing as a main dish or appetizer. Either original or modified, yummm...
