This is one crazy delicious way to use your spinach!
Saute one whole chopped onion in some olive oil. When the onions are starting to get cooked (about halfway done), season with salt and pepper, then add some sliced mushrooms.

(Dec 20, 2012 at 12:37 pm)I used one packet of smoked salmon. I'm sorry I don't remember the exact amount, but it was probably 4 or 6 oz. For the spinach, I used a a lot-- one big bag full (again, sorry, I don't know the exact amount.) But it was a big, hefty bag of spinach. The spinach cooked down in size a lot. |  (Katherine M.) |
