Potatoes, Sweet | Potatoes | Pork, Beef, Sausage |
Start with browning your favorite sausage & remove from pan before adding potatoes. Then cube Beauregard, white O'Henry, Purple Sweet Potatoes, & Red Skinned potatoes and put in the skillet with sausage drippings to brown for a few minutes....

Papa Spuds Farm to Table Soup

My family calls this "Papa Spuds" soup because everything but the chicken broth comes from here.

1 package andouille sausage, casings removed
2 stalks of celery, finely chopped
1 large carrot or a few small, finely chopped
1/2 large yellow onion or 1 medium,....

These were great! The farmer's cheese from Hillsborough Cheese Company melts beautifully and has a great flavor. This is for two portions.

4 flour tortillas
2 links Mexican chorizo (we used Rainbow Meadow Farms' chorizo- VERY good!)

You could also use the method in which you just fold the tortilla over, like I've seen at some Mexican restaurants...that might be easier when you have to flip it.
