These were great! The farmer's cheese from Hillsborough Cheese Company melts beautifully and has a great flavor. This is for two portions.
4 flour tortillas
2 links Mexican chorizo (we used Rainbow Meadow Farms' chorizo- VERY good!)
7- 8 oz farmer's cheese
First, remove chorizo from the casings and brown. Drain and set aside.
Slice or crumble cheese.
Heat a nonstick or very lightly oiled pan to medium heat. Put a tortilla in the pan. Top with some chorizo and cheese. Put another tortilla on top. Carefully monitor the bottom tortilla to avoid burning. Flip when it's starting to crisp and brown. This only takes a couple of minutes. Repeat with the other side. Press down with spatula to make sure cheese melts uniformly and everything holds together. Carefully remove from pan and slice (a pizza cutter works well).
Serve with desired sides/ dips/ toppings. We served them with avocado slices, lime, black beans, and salsa verde. Rob M. (Jan 17, 2012 at 2:51 pm)Thanks Laurie, these look delicious!
