50 clove garlic chicken with roasted root vegtables

Chicken, Whole | Garlic | Turnips | Onions | Carrots |
This is a very easy dish that can easily be assembled on a weeknight. You can really use any combo of root veggies you have available.

Turnips
Onions
Rutabagas
Carrots
Garlic
Whole chicken
olive oil
Fresh rosemary
Dried oregano
Salt
Cayenne pepper
Black pepper

Use a large glass baking dish. Place the chicken in the dish. Cut cloves in half and start stuffing the garlic and fresh rosemary underneath the skin. Rub chicken with olive oil and sprinkle generously with garlic salt and peppers and oregano. Chop peeled carrots, turnips, Rutabagas and onions. Toss with olive oil and spices. Place around chicken. Bake at 350 for an hour.
You can use the roasted garlic to spread over baguettes as well. Enjoy!
