The fresh ginger adds brightness, while the cayenne pepper packs some heat. Though delicious right away, this soup tastes even better the next day. You could serve it cold or at room temperature, but its flavors are fullest when heated....

This is a great way to use beet greens. You end up with a delicious, creamy risotto that's lightly pink colored. I served this risotto with boiled beets on the side.

BEETS with FETA

2 large beets, cooked and diced
Feta cheese, crumbled
Lemon juice

Arrange diced beets on four small plates, top with feta. Sprinkle with fresh lemon juice. Serve.
