Sweet Potato, Kale, and Black Bean Tortilla Bake
This tortilla bake is full of excellent textures and flavors... from the sweet softness of the potatoes to the chewier, earthy flavor of the kale. The onions kick the flavor up a notch and the cottage cheese adds a bit of saltiness. Feta over the top is the perfect compliment to enhance the flavors in the rest of the dish! A healthy and comforting vegetarian meal to keep you warm on those cold winter nights...
Ingredients:
2 large sweet potatoes, peeled and cubed in 1 inch pieces
1 large bunch of kale, cut up in bite sized pieces
1 can black beans, rinsed and drained
1-2 cups cottage cheese
Whole wheat tortillas - burrito sized
Large onion, diced
1 jar of roasted garlic pasta sauce (I used Whole Food's brand)
1 cup shredded mozzarella cheese or crumbled feta, depending on your preference
Directions:
1. Boil sweet potato cubes until tender, drain and set aside.
2. Head oil and about 1/8 cup water in a large pan with lid. When almost simmering, add kale, cover, and steam for 5-10 minutes, until very tender. Cover with cold water and then drain and set aside.
3. Sautee onions until tender and mix with pasta sauce.
4. Preheat oven to 325 degrees.
5. Place 2 tortillas in bottom of 9x13 dish
6. Layer:
-1/2 of sweet potato cubes
-1/2 of black beans
-1/2 of kale
-1/3 of pasta sauce/onion mixture
-Dallop 1/2 of cottage cheese over pasta sauce
7. Repeat layers, tortillas through cottage cheese (making sure to reserve some pasta sauce for top)
8. For top (3rd) layer, use 2 tortillas, then rest of pasta sauce spread over top.
9. Bake, covered with tinfoil, at 325 for 30-40 minutes
10. Remove from oven, top with mozzarella or feta, and return to oven to bake, uncovered, for another 10 minutes... may broil for a couple minutes to brown cheese.
