Susan H. | Sweet potato and black bean burritos

1 Tbs vegetable oil
1 onion, chopped
4 cloves garlic, minced
6 cups kidney beans, drained (I used black beans instead)
2 cups water
3 Tbs chili powder
2 tsp ground cumin
4 tsp prepared mustard
1 pinch cayenne pepper
3 Tbs soy sauce
4 cups cooked mashed sweet potatoes
12 ten-inch flour tortillas, warmed in microwave using a damp paper-towel-lined plate
8 oz shredded cheddar cheese
Preheat oven to 350.
Heat oil in skillet and sauté onion and garlic over medium heat until onions are translucent. Stir in beans and mash. Gradually stir in water and sweet potatoes and heat until warm. Remove from heat and stir in spices, mustard and soy sauce. Put generous amount of bean mixture into warm tortilla and sprinkle with cheese. Roll tortilla and place in baking dish. Sprinkle rolled tortillas with cheese. Bake for 10 to 15 minutes. Serve w/ sour cream, salsa or guacamole.

I had to swap a few things out since I did not have 3 cans of black beans...so I did one can black beans, one can kidney beans and one can brown rice and green lentils. I subbed out the sour cream topping with plain yourt and squeezed a wedge of lime over the whole thing. My daughter (6 years old) and husband loved it! | | |
