Luma k. | Red Lentil Soup with Carrots and Kale

3 cups cracked red lentils, rinsed
5 leaves Kale, de-stemmed and chopped
1 Red Onion Chopped
1 Tbs Cumin
3 Carrots (chopped into thin quarter circles)
Salt and Pepper and Cayenne to Taste
Lemon for garnish
Pita bread, whole Scallion
-Boil Water in a kettle
-On medium heat saute onion in safflower (or whatever you prefer) until soft for 5 minutes.
-Add lentils and stir for 2 minutes
-Add two cup of hot water, bring to a boil
- Stir until water is almost gone.
- Add another 2 cups of hot water, add cumin, salt (1 tsp) and pepper (1/2 tsp) Cayyene (1/4 tsp)
- Bring to a boil, lower heat
- Gently mash lentils and onions with potato masher (or blender: texture is better with potato masher) , (careful not to splatter and burn yourself)
- add Kale and carrots cover, low heat for 10 minutes.
-Add one more cup of water (I like the soup to be a bit chunky, you can add more water to your liking)
-If Carrot is soft then this soup is done.
rip pita into little pieces add to the soup
add 4-5 drops of lemon
and chomp on a scallion while you eat the soup
This is a boost to your nutritional needs, a feast for your senses. I realize the lentils are really the stars of it, but you can't ignore the sweetness of the carrots, and who doesn't love greens in a soup? The lemon, scallion and pita really make this dish. | ( .) | |
