2 whole wheat pizza crust(s)
Olive Oil
1 Red Onion, chopped
3-4 cloves garlic, chopped/minced
2 zucchinis, coursely chopped
3-4 Medium tomatoes,....

2 roma tomatoes,
salt oil garlic

Saute onion and garlic in oil until soft. Add zucchini, green peppers, tomatoes and cook 8-10 mins. Add salt and pepper.

Great as a light meal, or as an appetizer, just use slices of french baguette bread instead.
