Goat Cheese, Tomato and Caramelized Onion Toast

Great as a light meal, or as an appetizer, just use slices of french baguette bread instead.

Serves: 4
8 slices of Honey Wheat loaf bread
Goat Cheese (I used honey fig)
4 medium sized tomatoes, sliced (I used Lemon Boy)
2 onions, thinly sliced
2 Tbsp Brown Sugar
a few handfuls of fresh Spinach (if desired)

1. Caramelize onions over low heat (as they start to cook, add brown sugar to encourage caramelization process)

2. Generously smear goat cheese over slices of bread, and layer toppings in following order: Spinach, tomatoes, small pile of onions.

3. Bake at 350 degrees for approximately 10-15 minutes, or until bread is a little crispy.

4. Sprinkle each toast with a little salt & pepper, then serve! For an extra treat, if available, drizzle with a little bit of truffle-infused olive oil.
