Ingredients: - flexible!
2 whole wheat pizza crust(s)
Olive Oil
1 Red Onion, chopped
3-4 cloves garlic, chopped/minced
2 zucchinis, coursely chopped
3-4 Medium tomatoes, sliced or chopped
*Note: if using very firm green tomatoes, roast in the oven on 425 until softer or sautee with rest of veggies
Any other veggies you like - corn, peppers, broccoli, squash, spinach, etc!
1/2 can of pizza sauce or pesto
Ball of fresh mozzarella, sliced (can use shredded)
Directions:
Preheat oven to appropriate temparature for your crust.
Sautee garlic, onions and veggies (minus tomatoes) in olive oil in large skillet until softened.
While veggies are sauteeing, spread crusts with a light layer of pesto or tomato sauce.
When veggies are ready, spread evenly on each crust (it will be a hefty layer depending on the more veggies you use - but the more the better!)
Place slices of mozzarella over each pizza
Slide each pizza in the oven and cook as directed for crust (usually between 7 and 10 minutes).
