Serves 2. Recipe can easily be doubled/tripled.
Ingredients:
3 red potatoes
1 bunch green onions or 1 yellow onion
4 eggs
1 tsp salt
olive oil
(optional) 1 tomato
1. wash and thinly slice the potatoes, saute with olive oil in shallow non-stick pan with sloped sides.
2. while potatoes are cooking, whisk the eggs in a separate bowl and add a teaspoon of salt.
3. just before potatoes begin to get a little crispy, add half of them to the eggs, to warm up that mixture. after 2 minutes or so, pour all of the bowl into the pan, turn heat to med-low and cover. Don't stir it around! Let the eggs set.
4. When there is only a little bit of uncooked egg on the top, use a spatula to slide the whole tortilla onto a flat plate, cooked side down. Place pan upside down on top of plate, and flip the tortilla back in (carefully).
5. After a few minutes, it's done! slide back onto plate and serve (I serve with tomato slices on top). 1 person likes this! 5.00 (1 ratings) | | |
