Serves 2. Recipe can easily be doubled/tripled.

Ingredients:
3 red potatoes
1 bunch green onions or 1 yellow onion
4 eggs
1 tsp salt
olive oil
(optional)....

1 tub goat cheese, any flavor (dill is yummy)
1 ripe tomato (sunburst has been awesome)
2 slices toasted bread (your choice)


Toast....

Two slices of bread
Handful of pea shoots
Schmear of garlic dill goat cheese
Slices of tomato
= yum!

These pea shoots seem like they would be good in anything where you would put spinach. Raw or sauteed.

Tim and Nancy Bass from Sunburst Tomato Company are back this Spring with their famous Sunburst, hot- house tomatoes.  Let me tell you, these are not the average hot-house tomato!  

Most greenhouse tomatoes are brought in from out of state,....
