This is a great weeknight dinner if you have pizza dough or premade crust handy. You can add just about anything, though this is our favorite combination.
What you need:
4-5 slices of bacon (optional, of course)
pizza crust (We use individual ones- it's fun to have your own pizza!)
About 2 c kale, chopped
2 cloves garlic
About 1/2 medium onion
1 shallot
Red pepper flakes
2 eggs
First, if your pizza dough is raw, coat lightly with olive oil pre-bake it in a 400° oven for about 10 minutes.
Fry bacon and set aside. Next, saute onions, garlic, and shallots until just translucent (try not to brown.) Then saute the kale just enough to soften.
Spread all ingredients evenly over crust(s). Crumble bacon on top. Crack an egg in the middle of each one. If you're making one big pizza, modify to desired level of "egginess" per portion!
Bake pizzas in 400° oven for 12-15 minutes. If you like your egg runny, which I do, stick to the 12 minute side and monitor to make sure it's not overcooked. Sprinkle with red pepper flakes. If the yolk's nice and runny, break and spread over the pizza.
Rob M. (Oct 12, 2011 at 11:47 am)I like this idea, looks delicious, and creative! If I have time, I usually try to make my own dough, mainly because I never have a premade dough on hand, and don't want to make a special trip. I usually use this recipe, which is pretty quick and easy:

It's a great week night dinner or even brunch, and you can add pretty much anything you want. Even a small pizza is pretty filling.
