1 bunch kale, washed & stems removed
1/2 cup walnuts, toasted
1 Tbsp Olive Oil
1/4 tsp salt
2 cloves garlic, minced
1 can white beans, drained & rinsed
1/8 tsp nutmeg
1 Tbsp lemon juice
1/4 cup grated Parmesan cheese
2 eggs, poached
Wash and chop the kale into 1 inch pieces.Toast the nuts in a dry skillet for a few seconds and remove.
Heat the olive oil over medium-high heat in the same pan. Add the beans and stir to coat, then let them sit until they start to brown, about 5 minutes. Add the garlic and stir for another minute.
Add the kale and salt to the pan and cook until it's slightly wilted, about 1 minute. Stir in the walnuts and nutmeg. Stir for another few seconds, then mix in lemon juice. Remove from heat and sprinkle on Parmesan cheese. Place a poached egg on top of each serving.
