Fall Garden Soup

Carrots | Beans | Onions | Tatsoi | Tomatoes, Slicing | Turnips |
Ingredients:
2-3 Purple Top Turnips
2-3 Sweet Potatoes
Small Bunch Tatsoi
1/2 Red Onion
2-3 Carrots
1 tomato
3 cloves Garlic
1 cup Green Beans
1 can Organic Garbanzo Beans
1 can Organic Red Kidney Beans
1 Vegetable Bouillon Cube (or 1 Liter Vegetable stock)
Salt to taste

Method:
Dice the turnips, sweet potatoes, and tomatoes into medium-sized cubes. Shred the tatsoi. Chop the onion and carrots. Mince the garlic. Break the green beans into thirds. Drain the canned beans. Mix all the ingredients in a crock pot. Cover with water to a level about 3 fingers above the vegetables. Season to taste. Turn the crock pot on high and cook at least 8 hours. Serve with fresh bread for a delicious, easy meal any night of the week.
