Vegetarian green and yellow stir-fry

Squash, Yellow | Haag and Sons Seafood | Greens, Kale |
1 Cucumber
2 small yellow squash sliced
.5 half bunch of kale torn
Soy Delight vegetarian chicken strips (local from Morrisville!)
Balsamic vinegar
Olive oil
Parmesan

This is a delicious and super simple dish to make! Simply cut the cuke in half and scoop out the seeds. Chop into bite size pieces. Saute in pan with yellow squash and a little bit of olive oil and balsamic vinegar. Set aside. Spray pan with olive oil and stir the kale until it is wilted and has a slightly smoky taste. You won't need too much olive oil. Throw in the vegetarian chicken strips until heated through. Stir the cucumber/squash mixture in until reheated. Place on plates and sprinkle with parmesan. Delicious and nutritious!
