Ingredients: 1 large cucumber
1 carrot
1 small red onion
1 green bell pepper
3-4 sprigs of fresh coriander (aka cilantro)
2 tbsp ground unsalted roasted peanuts (optional, for garnish)
1 large clove garlic, finely chopped
1 long hot pepper (light green in color)
1 tbsp sugar (optional)
1/4 cup seasoned gourmet rice vinegar (avail. in most grocery stores, dressing aisle) or homemade vinegar dressing*
Method: Mince hot pepper and garlic and add to seasoned rice vinegar. Then add sugar. Set aside. Peel carrot, cucumbers, and red onion. Remove seeds from bell pepper. Dice vegetables and coriander. Mix vegetables, coriander, and peanuts in a bowl. Toss with dressing and serve immediately. | | |
