Bacon Cheddar Potato Dip

Another sure-fire winner for a Superbowl party or anytime you need to make a dip for hungry guys! This dip is pretty simple and serves as a stand-in for loaded potato skins!

Ingredients:
3-4 small potatoes, boiled and mashed finely
3-4 pieces bacon, cooked and crumbled
1 cup sour cream
1 package light cream cheese
2 scallions, sliced
1 cup sharp cheddar cheese

Directions:
Mix ingredients well in a bowl, reserving some cheese and scallions for topping. Put mixture in a oven-safe dish and bake at 375 degrees for 20-30 minutes, until dip is hot and bubbly. Serve with potato chips, crostini, or vegetables like red pepper and broccoli.
