Chicken Breast with Bell Peppers

Ingredients

2 Tbsp canola oil
1 tsp minced garlic
1 Tbsp ground ginger root
1 medium onion (cut into cubes)
2 medium tomatoes (with tomato juice if canned)
2 pound uncooked boneless, skinless chicken breast
1 bell pepper (cut into cubes)
1/4 tsp turmeric powder
1/2 tsp chilli/cayenne powder
1/2 tsp garam masala (Indian spice found in any Indian grocery store)
1/2 tsp coriander powder

Instructions

In oil fry onions until pink, then add chicken and ginger and garlic. Fry until the chicken turns white. Then add tomatoes, and all the spices and cover and cook on medium-low until the meat is cooked. Then add the onions and bell pepper and cover and let steam for about 10 minutes.
