Black Bean and Bacon Soup

Carrots | Celery | Onions |
Ingredients:
* 8 slices of bacon, cut into small pieces
* 1 large onion, thinly sliced
* 2 carrots, finely chopped
* 2 celery stalks, thinly sliced
* 2 cloves of garlic minced
* 2 cans (15 oz) black beans, rinsed
* 1 can (14 1/2 oz) chicken broth

Method:
1. Cook bacon in large pan until crisp. 2. Drain bacon and remove from pan. Reserve 3 tablespoons of drippings. 3. Add onion, celery, and garlic. 4. Cook and stir until tender-crisp. 5. Stir in beans and chicken broth. 6. Simmer 15 - 30 minutes. 7. Puree soup in blender and return to sauce pan. 8. Stir in bacon.
