Cold Corn Salad

This is a simple, flavorful corn salad. Serves 5-6

*5-6 ears of corn
*1/2 c diced red onion (can use yellow onion instead, it just isn't as colorful)
*3T apple cider vinegar
*3T olive oil
*1/2 tsp kosher salt
*1/2 tsp black pepper
*1/4-1/2 c fresh basil leaves, sliced thin

-Boil corn in water 3 minutes.

-Remove corn from the cobs with a knife. Place in a dish, preferably one that can be covered.

-Mix in the rest of the ingredients except for the basil.

-Refrigerated for several hours.

-Add the sliced basil just before serving
