I made this, and it was pretty good! I also added ginger, and cauliflower as well. It was a little to runny, so I Pureed half of it and added it back to the pot with the "chunky" parts. Much better! It also doubled as a nice sauce over a pork chop.

Have I mentioned how much I love beets? Here are some great recipes for them, I am about to go make some roasted beets, will be having the beet smoothie and a roasted beet salad on baby spinach and arugula....
