* Because it's so spreadable, it can be used by itself on crackers, bagels, toast, etc.
 
* It also pairs well with many cooked dishes.  I've used it often in breakfast casseroles, scrambled eggs, & Mexican & Italian dishes.

1 tub goat cheese, any flavor (dill is yummy)
1 ripe tomato (sunburst has been awesome)
2 slices toasted bread (your choice)


Toast....

Handful of pea shoots
Schmear of garlic dill goat cheese
Slices of tomato
= yum!

These pea shoots seem like they would be good in anything where you would put spinach. Raw or sauteed.
