Acorn Squash w/Sausage & Apple Stuffing

This is my first time cooking stuffed acorn squash and I combined several recipes to utilize what I had around. I think it turned out well.

Pre-heat oven to 400 F

Cut 2 Papa Spud's acorn squash in half and scoop out seeds
Brush with melted butter and salt & pepper
Cook for 40 minutes to 1 hour (I think depending on size b/c all the recipes said an hour but 40 minutes was enough)

Make stuffing:
1/2 lbs sausage (used sage sausage from whole foods)
1-2 cloves garlic
Cook together in frying pan until pork is cooked, drain fat
Then add one Papa Spud's Suncrisp apple chopped, cooked until slightly soft.
Place in bowl and mix with 3/4 cup bread crumbs, 1 egg beaten, red pepper flakes to taste, and half of the 4oz container of the spicy pimento goat cheese.

Stuff the cooked squash with the stuffing, piling the stuffing up a bit. Place back in the oven for 15 to 20 minutes.
