Delicious Sandwich (that's what we call this in our house!)
1 block tofu
Marinade 1 tbsp miso 1 tbsp soy sauce 1 tbsp lime juice dash of liquid smoke
Lime-Cilantro Mayo Handful cilantro Juice of 1 lime 1/2 cup mayo (can use vegan mayo to make this vegan)
Cucumber Mint Shredded Carrots Red Onion Hamburger Buns (from The Bread Shop) Bottled Ginger dressing (recommend Maloko)
This is a little labor intensive but totally worth it! Plus if you make 6 at a time, it's not too bad.
Slice the tofu into 1/8" slices, place on plate lined with paper towels and top with more paper towel and another plate. Weight with a couple of cans and press out the liquid (1/2 hour or longer).
Combine marinade ingredients and brush on each side of each tofu slice and marinade in fridge for 20 minutes (or longer - you can leave this until you need to cook them)
Meanwhile, combine carrots and ginger dressing and set aside to let the carrot absorb the dressing.
Combine cilantro, lime and mayo in blender and blend until cilantro is chopped finely.
Pan-fry tofu slices in a hot pan with 1tsp oil until golden brown.
Lightly toast hamburger buns. Spread each half with lime-cilantro mayo. On the bottom half, add two or three mint leaves, some tofu slices, some thinly sliced cucumber and red onion, then top off with some carrot before putting on the top bun. | | |
