Arugula on Pasta (for dummies!)

This week's delivery included arugula.  I love the sort of peppery flavor of this leafy green. There was a recipe for Arugula and Goat Cheese on Pasta in the copy of Papa Spud's News that came with my box.  While rummaging through my pantry last night I came across a box of Pasta Roni (garlic & olive oil flavor) and decided to make a sort of "dummies" version of the arugula and goat cheese recipe.  While it might not appeal to true purists when it comes to cooking from scratch, this recipe was easy and delicious!  I followed package directions for preparing the pasta roni.  While that was cooking, I sauted the arugula & tomatoes in garlic with olive oil according to  Papa Spud's recipe and seasoned with a little salt & pepper. Then I spooned the arugula mixture over the over the cooked pasta, and topped with asiago cheese (I didn't have any goat cheese).Yum! This version is a nice option when you are just cooking for 1 or 2 and an added bonus is that the pasta makes its own sauce! :)
