Strawberry Spinach Salad

Arugula | Lettuce | Spinach | Strawberries |
Ingredients:
Dressing:
1 tablespoon fresh lemon juice
2 tablespoons white wine vinegar
1/3 cup pure cane sugar
2 - 3 tablespoons canola oil
1 teaspoon poppyseeds
dash of sea salt and fresh ground pepper
 
Salad:
6 ounces washed baby spinach or green leaf lettuce
1/2 cup diced red onion
1 medium cucumber peeled and sliced
1 1/2 cup sliced fresh strawberries
1/4 cup toasted sliced onions
1/3 cup feta cheese, blue cheese or goat cheese

Method:
Mix ingredients together for salad dressing in a container. Refrigerate for 2 hours, or overnight. When ready, pour dressing over salad mix and serve immediately.

Here Comes the Sun Smoothie: Ingredients:
1/2 cup non-fat Greek yoghurt
1/4 cup frozen blueberries (I freeze the berries I get from PS)
1 cup frozen strawberries
1/2 cup orange juice 
5-6 ice cubes
1 fresh banana


Blend all the ingredients together in a blender on 'liquify'...
