Grilled Pizza with Arugula, eggplant, prosciutto and goat cheese

Ingredients:
Pizza dough
Tomato sauce
Arugula
Goat cheese
Low fat mozzarella
Italian seasoning
Garlic salt
Pepper
Fresh basil
Sliced eggplant
Fresh grated Parmesan

This is a great recipe with many of the ingredients available on the website. Start with a ready made pizza dough.
Heat the grill to medium heat.
Brush the eggplant with olive oil salt and pepper and grill on either side.
Meanwhile, prepare pizza dough on a floured surface. Sprinkle Italian seasoning, garlic salt and pepper on top while rolling out with a rolling pin.
Take eggplant off grill and set aside.
Place pizza dough directly on grill surface on med-high heat and flip when lightly cooked on that side
Brush on a small amount of tomato sauce, then layer eggplant slices, prosciutto, goat cheese and mozzarella. When cheese is melted add arugula and basil on top. Cook for one minute and remove from grill. Sprinkle fresh Parmesan and enjoy!
