Ingredients: 1 medium eggplant
1 tomato, diced
1 medium onion, diced
1 medium pepper, diced
1/4 c. chopped green olives
1/3 c. shredded cheddar cheese
2 T. worcestershire sauce
bread crumbs
Method: Peel eggplant and dice. Boil in a little water until softened. Drain.
In large saucepan, saute onion and pepper in olive oil. Add eggplant and tomatoes to saucepan.
Stir in olives, worcestershire, and cheese until well blended.
Pour all in greased casserole dish and top with bread crumbs.
Bake at 300 for 30 minutes.
