Cabbage Fried Rice

Cabbage | Onions | Garlic | Eggs |
2 tbsp peanut oil
1 large onion, thinly sliced
1" cube ginger, finely chopped
3 cloves garlic, finely chopped
1/2 head green cabbage, shredded
3 cups cooked white rice
1 egg
Soy sauce, Srinacha sauce, toasted sesame oil

Heat oil in wok until very hot and add onion. Stir fry until browning at the edges.  Add garlic and ginger and stir fry for 30-40 seconds until fragrant. Add shredded cabbage and stir fry for 5 minutes until tender-crunchy, then add rice and stir fry for another 4-5 minutes until it gets a little crispy on the bottom.  Beat the egg with a little soy or other seasoning and add to the rice - it will cook almost immediately. Serve and enjoy with extra condiments as above!  Makes terrific leftovers, too
