Green Tomato Pimento Cheese Panini

Spinach | Bread, Artisan | Tomatoes, Green |

Ingredients:
Artisan Bread slices (thin)
Pimento Cheese (I love Harris Teeter's jalepeno or Palmetto brand)
Fresh Green Tomatoes
Spinach, if you like
Butter

1) Heat skillet over medium.
2) Butter outsides of bread.
3) Spread pimento cheese lightly over both insides of the bread slices.
4) If the tomato is very firm, cook for a couple of minutes on each side, you may also sautee the spinach if you like it cooked.
5) Put tomato and spinach on sandwich, and put sandwich carefully into hot skillet.
6) Cook for 3-6 minutes per side, pressing down with grill press or spatula as it cooks.
7) When cheese is melted, remove from skillet and enjoy!
