INGREDIENTS 6 WHOLE GREEN OR SIMILAR SIZED GREEN OR RED BELL PEPPERS 1 ONION CHOPPED 1 LB GROUND BEEF OR TURKEY 1 15 OZ CAN KIDNEY BEANS DRAINED RINSED 1 15 CAN BLACK BEANS DRAINED RINSED 1 16 oz JAR SALSA 2 CUPS FRESH CORN 2 CUPS DICED TOMATOES 1 CUP COOKED RICE 2t. CHILI POWDER 1/2 t GROUND PEPPER 1 t CUMIN
CHOP TOPS FROM GREEN PEPPERS DISCARD SEEDS AND MEMBRANES. COOK THE WHOLE GREEN PEPPERS UNCOVERED IN BOILING H2O
FOR 5 MINUTES DRAIN AND CUT IN HALF. LAY IN THE BAKING DISH.
IN A SKILLET BROWN MEAT AND ONION,. DRAIN.
ADD BEANS, SALSA,CORN TOMATOES RICE AND SEASONINGS.
SIMMER FOR ABOUT 45 MINUTES. YOU MIGHT HAVE TO ADD A LITTLE A H2O.
ADD ABOUT 11/2 CUPS SHREDDED CHEESE STIR UNTIL MELTED.
STUFF THE PEPPER HALVES WITH THE INGREDIENTS WITH THE MEAT MIXTURE SAVING THE REST OF THE GROUND MEAT MIXTURE FOR TACOS.
BAKE AT 350 DEGREES FOR ABOUT 40 MINUTES.
