Fusille Primavera in Spicy Peanut Sauce

Ingredients:
3 T. smooth peanut butter
3 T. sour cream
2 t. rice vinegar
1 t. soy sauce
1/8 t. red pepper flakes
10 ounces fusille or other pasta
2 t. sesame oil
8 oz. snow peas, julienned
1 c. green onions, cut in 1-inch pieces
1 c. halved cherry tomatoes
1 T. toasted sesame seeds


Method:
Blend sauce ingredients (peanut butter, sour cream, rice vinegar, soy sauce, and red pepper flakes); set aside. Cook and drain pasta, reserving 1 T. of the water. Meanwhile, saute snow peas, green onions, and cherry tomatoes in sesame oil 4 to 5 minutes, until crisp-tender. Stir the reserved 1 T. water into sauce. Add sauce and veggies to pasta; toss gently until coated. Sprinkle with toasted sesame seeds. Serve hot or at room temperature.
