Avocado-Grapefruit Salad

Ingredients:
2 avocados
2 limes or lemons
2 red or pink grapefruit
1/3 cup olive oil
1 T dijon mustard
salt
pepper
parmesan cheese

Method:
Peel avocado and slice. Cut 1 lime or lemon, and squeeze juice over avocado slices, to keep them from turning brown. Cut peel and pith from grapefruit. Using sharp knife, cut grapefruit into sections (do not include membranes). Arrange avocado slices and grapefruit sections on plate. In small bowl, zest remaining lemon or lime. Squeeze juice. Whisk mustard and olive oil into bowl, season to taste with salt and pepper. Drizzle dressing over salad. Add nice big slices of parmesan over top.
