Avocado/Monterey Jack Toast

Ingredients:
One ripe avocado
Two English muffins (honey wheat works well)
Monterey Jack cheese (enough slices to cover muffins)
Butter

Method:
Peel, pit and slice the avocado. Split English muffins. Dot the muffins with butter and place on a baking sheet. Broil just long enough to soften the butter, and remove from the oven. Spread the softened butter evenly on the muffins. Slice the cheese and cover each muffin with cheese slices. Broil until the cheese melts and starts to bubble. Remove the muffins from the oven and top with avocado slices. Chow down! Makes two servings.
