Chilled Avocado & Cucumber Soup

Avocados | Cucumbers, Slicing |
Ingredients:
2 cucumbers
1 avocado
1 cup spinach
1 cup yogurt (plain or greek)
2 T. fresh lemon or lime juice
dill weed (or basil, mint etc. to taste)
salt & pepper to taste

Method:
A 1 cup plain or greek yogurt to blender. Peel cucumbers and remove seeds if desired. Chop coarsely and put into blender. Remove pit and peel from avocado & add to blender. Add remaining ingredients and blend until smooth, adding some water to achieve desired consistency. Chill and serve. Garnish with diced cucumber and dill. Can also add any other green veggies such as arugula, green peppers etc.
