Tzatziki Sauce

Cucumbers, Slicing |
Ingredients:
1 pint of greek-style yogurt (or 3 c of plain yogurt strained overnight)
1 large English cucumber (can use two large "regular" cukes), peeled, shredded and drained in a colander
3 cloves garlic, crushed
1-2 T olive oil
1 tsp dried mint
1/2 tsp dried dill ground sea salt to taste

Method:
To drain the cucumbers: place peeled and shredded cukes in a colander, sprinkle with salt. Let sit for about 30 minutes. Mix all the ingredients together. Let flavors blend for an hour or more before serving.
