Baked Cheesy Catfish

I just had to try the catfish that Papa Spuds offered this week, and I wasn't disappointed!  I couldn't find a recipe on Papa Spuds web site, so I merged and adapted two or three that I found on the internet.  Here is what I came up with.

1-2 eggs, beaten
1-2 T milk
1 c grated Parmesan cheese
1 c flour
2 t salt (plain or seasoned)
1 1/2 t black pepper
1/2 c coarsely chopped tomato
1/4 c coarsely chopped green onion
catfish fillets
1/2 c margarine, melted

Combine the beaten egg(s) and milk in one bowl.  In another bowl, combine the cheese, flour, salt, and pepper.  Dip the fish fillets (I had one large fillet which I cut into 3 smaller portions) in the egg & milk mixture, then dredge in the cheese mixture.  Place catfish fillets in a single layer on the bottom of a greased 9x13 inch baking dish.  Bake at 350 degrees for 15-20 minutes.  Remove from oven.  Turn on broiler.  Sprinkle chopped tomato and green onion on top of the fish.  Pour melted margarine over all and return fish to oven.  Broil for 5 minutes and serve!
