Striped bass!

I have been dying to try Papa Spud's seafood for a while, so I took the plunge with last week's delivery and ordered striped bass.  It was YUMMY and so easy to prepare!  I just brushed the fillets with melted butter (you could use olive oil) and  seasoned with salt & pepper.  I grilled the fillets for 4 minutes on a side over a hot fire.  Before grilling the fish, I prepared a simple sauce by melting 2 Tbs of butter in a frying pan.  To the melted butter I added 1 Tbs of fresh lemon juice, 1/2 c of clam juice, and 2 tsp of capers.  I simmered all of this for a few minutes to reduce the liquids slightly. I poured the warm sauce over the grilled fish and sprinkled a few chopped chives on top.  Delicious! I used regular chives, but I think garlic chives would be even better.  I also think that substituting white wine for the clam juice would work well.  I am excited about trying some of the other fish from Papa Spuds soon!
