Spicy baked fish

Ingredients

1/8 tsp ground turmeric
1 tsp table salt
2 Tbsp vinegar
2 Tbsp canola oil
1 1/2 Tbsp freshly ground ginger root
1 large onion
2 medium tomatoes
1/2 cup canned tomato sauce
1/8 cup green hot chili (jalapeno or serrano) peppers (or to your taste)
2 Ibs fish
1/8 tsp chili powder
1 tsp garam masala (Indian spice you can find in any Indian grocery store)

Instructions

Wash the fish and rub it in vinegar, turmeric powder and salt; set aside for 1 hour. Heat oil and fry the sliced onion until golden/brown. Add diced tomatoes and ginger; fry well. Add all the spices except for the fish. Cook until the gravy is thick and you can see the oil rise up to the sides of the pot. Place the fish in a greased baking dish. Spoon the gravy on top of the fish and and bake at 350 degrees for 30 minutes (or until the fish is cooked).
