Stuffed Artichokes

Ingredients:

2 artichokes
1/2 cup broth
1/2 cup instant couscous
1/4 teaspoon cumin
1/4 teaspoon garlic salt
1/4 teaspoon curry


Method:

Wash artichokes and cut off stems and small base leaves. Place artichokes snugly into a deep saucepan and boil gently in lightly salted water for 40 minutes (add more water as it boils off). Remove artichokes from water, and stand upside down to drain. Once drained, remove fuzzy center and center petals with a spoon. While artichokes boil, add broth, curry, cumin, and garlic salt to a separate saucepan and heat to a boil. Once boiling, remove broth from heat and stir in couscous. Let stand for 5 minutes. Fill artichokes with couscous and serve.
