Creamy cucumber salad

Cucumbers, Slicing | Onions |
Ingredients:
3 large cucumbers, partially peeled leaving strips of green
1 onion, diced
salt
water
8 oz plain yogurt
1/4 cup cider vinegar
1 Tbsp sugar

Method:
Thinly slice cucumbers. Sprinkle with salt and a little water ensuring that all the cucumbers have been salted. Allow to sit for 30 min. This will soften the cucumbers. Rinse thouroughly a few times to remove most of the salt. In a seperate bowl, combine yogurt, vinegar and sugar. Combine dressing with rinsed cucumbers and diced onions. Allow to marinate at least one hour in refridgerator before serving.
