Roasted Asparagus

Asparagus | Lemons |
1 bunch asparagus
1/4 c olive oil
1 t garlic powder
1/2 t dried oregano
1/4 t red pepper flakes
1 lemon
Couple twists of fresh ground pepper
2-3 oz of feta cheese

Preheat oven to 400. Line a cookie sheet with parchment paper. Break the ends off the asparagus and place in center of lined cookie sheet. Combine olive oil, garlic, oregano, red pepper flakes, the zest of 1 lemon and a couple grinds of black pepper. Pour oil mixture over the asparagus and toss the asparagus until completely coated. Spread the asparagus in a single layer on cookie sheet and crumble the feta cheese over the asparagus. Roast for 10-15 minutes. Remove from oven and squeeze the juice of one lemon over the asparagus. Serves 3-4.
