Ingredients: 1 cup rice
1 lb flank steak, trimmed of fat
1 zuccuhini
1 yellow squash Cooking spray
1/2 cup sliced green onions
1 t minced garlic cloves
1 T ground coriander (or cilantro)
1 t ground cumin
1/2 t salt
1/2 t ground tumeric
1 (14.5 ounce) can diced tomatoes or 1 1/2 cups fresh diced tomatoes
Method: 1. Prepare rice according to package directions. 2. While rice cooks, cut the steak into small cubes. Cube the entire zuccuhini and yellow squash. 3. Heat a large nonstick skillet coated with cook spray over medium-high heat. Add onions and garlic, saute 2 minutes. 4. Add zuccuhini and yellow squash, saute another 2 minutes. 5. Add coriander, cumin, salt, and tumeric, saute 1 minute. 6. Add steak, saute 6 minutes or until done. 7. Add tomatoes and reduce heat to low. Cook 3 minutes until thoroughly heated. The juices from the tomatoes will make a nice sauce with the seasonings. 8. Serve over rice. | |
