Zucchini fritters

(Modified slightly from the Smitten Kitchen blog)

You need:

2 medium- large zucchini
1/2-3/4 c flour
1/2 tsp baking powder
2 scallions, chopped
1 clove garlic, minced
1 egg, lightly beaten

Grate the zucchini in a food processor or box grater. Next, drain as much water as you can from the zucchini. I did this by wrapping it in a clean kitchen towel and squeezing the water out. It's amazing how much moisture will come out of the zucchini!

Mix drained zucchini with the egg, scallions and garlic. In a separate bowl, mix flour and baking powder, then add to zucchini mixture. Add more flour if mixture looks runny.

Heat about 2 tbsp oil (I used olive) in a pan on medium high heat. Drop batter into pan to form 2 or 3" patties. Saute until golden, then flip and saute other side.

We ate these plain, but I think they would also be great with dill in the batter, or with a fried or poached egg on top.
