Don't be afraid to try this: it is SO good!

1 pie pumpkin, with seeds and strings scooped out
1/4 lb. stale (or toasted) bread, cut into chunks
1 bunch green onions, sliced
2-4 garlic cloves, to taste
1/4 cheese, cut in chunks
1/2 cup almonds
6 slices bacon, cooked and crumbled
fresh thyme, to taste (1 TBSP is what I use)
salt and pepper
1/3 cup heavy cream

Line a baking sheet with parchment paper and preheat the over to 350 degrees. Place the pumpkin on the baking sheet. Season the inside with salt and pepper generously. Toss the bread, cheese, onions, bacon, nuts, and thyme together. Add the cream and mix. Season with pepper. Pack the mix into the pumpkin. Cover with foil or the pumpkin top. Put any extra stuffing in a separate oven safe container. Place the baking sheet in the oven for 2 hours...check at 90 minutes. Heat the extra stuffing or save for later. When it's finished, the skin of the pumpkin will be tender to a fork prick. Slice and scoop the stuffing over it. ENJOY! You can play with the fillings A LOT- a sweet pumpkin with rice, apples, raisins, and cheese is also delicious!
