Tangy coleslaw

Cabbage |
1/2 cup onion, finely chopped
3 TBS mayonnaise
2 TBS apple cider vinegar
1 TBS sugar
1/4 tsp salt (optional)
small head of cabbage, finely shredded
1. Combine onion, mayo, vinegar, sugar and salt. Mix well and set aside 30 minutes.
2. place cabbage in a sealable bowl. Add mayo mixture and stir together or toss until cabbage is well coated. Allow to sit at least one hour.
Caution: this recipe really makes enough for a small cabbage or 1/3-1/2 a regular sized head. Serves 4.
