Stuffed Green Peppers

Peppers, Bell, Green | Potatoes | Tomatoes, Slicing |
Ingredients:
4 large green peppers
1 pint tommy toes or 3 large tomatoes
15 med new red potatoes
8 oz cheddar cheese
8 pieces bacon

Method:
Cut the peppers in half and boil for 15 minutes. Boil the new potatoes and mash. Cut the cheese into cubes and the tomatoes into bite sized pieces. Place the peppers on the bottom of a baking dish. Mix the potatoes, cheese and tomatoes and cover the peppers. Place the bacon in strips over the mixture. Cook at 400 degrees for 1 hour or until mixture bubbles and bacon is crisp.
