Lemon Pepper Brussels Sprouts

Ingredients:
Bag of fresh Brussels Sprouts
1 Lemon
EVOO
Sea Salt and Pepper

1) Preheat Oven to 425.
2) Trim ends of sprouts, then cut in half.
3) In a medium bowl, whisk together 1-2 T of Lemon Juice (depending on how many sprouts you have), 1-2 T oil, and a good pinch of sea salt and pepper (to your liking)... remember, you can always add more salt later!
4) Add brussels sprouts to the lemon oil mix and toss.
5) Spread out on a baking sheet and pop in the oven for 10-15 minutes, until edges are crispy and any loose leaves are slightly browned. Gobble them up!

Note: If you tend to like softer sprouts, you may choose to bake them at 400 for 20 or so minutes. I tend to like them with a little more crunch.

These make a great side dish or just a wonderful healthy snack - I can't get enough!
